Kefir Cherry Chia Pudding

This is my favorite chia pudding! Even my dad likes it, which says a lot. It is good for breakfast, a snack or dessert because it tastes THAT good. It's also a perfect post-workout snack thanks to the protein and anti-inflammatory properties! It kind of reminds me of Liberte black cherry yogurt. Not only does it taste delicious, but it is full of probiotics and protein from the kefir, inflammation reducing tart cherry juice, and healthy fats, protein and omega's from the chia seeds. It'll keep you full and satisfy your sweet tooth. I usually double the recipe so I have it on hand during the week. It comes together in 5 minutes and has just 5 ingredients!

 

Cherry Kefir Chia Pudding

Kefir Cherry Chia Pudding

Servings: 2

Prep Time: 5 min

Total Time: 4-12 hours

Ingredients:

  • 3/4 cup plain unsweetened kefir (or canned coconut milk or unsweetened almond milk)

  • 2 tbs chia seeds

  • 3 tsp raw honey

  • 2 tsp tart cherry juice concentrate (you can buy it here, it's hard to find in stores)

  • 1/8 tsp almond extract

Instructions:

  1. Place all ingredients in a container with a lid, stir or shake to combine, seal and refrigerate overnight (or at least 6 hours).

  2. Enjoy as is or topped with coconut flakes, fresh fruit or your favorite topping! You can also blend it to make a smoother consistency. Just throw it in your blender after it has set until you see the chia seeds have been ground up and incorporated.
