Lemon Coconut Protein Bites!
Who else loves lemon as much as me?? My love of lemon went to a whole new level since getting my Young Living Essential Oils. It is such a versatile oil. I put it in my water in the morning, in my face oil at night, in my all purpose cleaner - and now these Lemon Coconut Protein Bites! It is for sure the first oil I am going to run out of. Back to these protein bites. These pack a heavy lemon punch thanks to the lemon juice, lemon zest and lemon oil (don't worry, if you don't have the oil you can still make them). Lemon promotes healthy digestion, healthy skin, and provides a good dose of vitamin C. These bites are also full of protein from the nuts and protein powder, healthy fats from the cashews, shredded coconut and coconut oil and vitamins and digestive help from the prunes. They are also refined sugar free, gluten free, dairy free and grain free! They are little powerhouse bites, perfect to have on hand when hunger hits!
A quick note about nuts. You can really use any mild tasting nut in this recipe, but be careful when you are buying your nuts to look at the ingredients. If you can find raw and unsalted in bulk that is best. I went to find cashews this week and the package said unsalted cashews. I grabbed them and took a quick look at the ingredients. It was cashews AND vegetable oil. You guys vegetable oil is SO bad for you. Avoid it at all costs. Nuts already have a high fat content, there is no need to be roasting them in any sort of oil, especially vegetable! Make sure next time you buy nuts they are either raw or dry roasted. Lemon Coconut Protein Bites
Makes: 15-17 bites
Total Time: 7 Minutes
Ingredients:
1 cup of brazil nuts, cashews or almonds (I have used all 3 and they all turned out great. The brazil nuts are my favorite though)
3 tbs unsweetened coconut flakes
12 prunes, pitted
1 scoop 100% vanilla whey protein (you can use a plant based protein to keep them dairy free)
zest of 2 small lemons
juice of 1 lemon (if you don't use lemon essential oil, use the juice of 2 lemons)
4 drops Young Living lemon essential oil
2 tbs unrefined coconut oil, melted
Instructions:
Put the nuts in a food processor and pulse until finely ground.
Add in the rest of the ingredients and process until the mixture comes together and is sticky.
Take the mixture out and form into small balls. Store in an airtight container in the fridge.
