Once I entered my third trimester I was feeling really tired and drained. I don't drink coffee and I didn't want to drink any more tea because too much caffeine isn't good when you're pregnant, so I had to find another way to find energy. I was also eating way less greens than I wanted to due to cravings and laziness (salads are a lot of work to make!). Well one afternoon I decided to make a green juice and I felt SO good the rest of the day. I didn't feel exhausted and my mind felt sharp. From then on I started trying to have at least 3 of these a week. An added bonus is that Everly loves it so it also helps up her greens intake as well. Anything that helps get more greens in your kids diet is a win for me!
I make this juice in my Vitamix so I keep all of the fiber. I'm not a big fan of juicers because they discard a lot of the nutritional value and create waste. The Vitamix is so strong that there isn't any grittiness left over in the juice and it goes down smooth. It gets frothy at the top and is a vibrant green color. I love the ginger and lemon in this juice because it cleanses and is so refreshing. This juice contains 3-4 servings of veggies (two from the spinach, one from the celery and one from the cucumber) and 1 serving of fruit (a green apple), which I'm sure we can all use help with some days! Makes: 1 serving
1 green apple, diced with skin on
1-2 stalks of celery, diced
5 1-inch pieces of cucumber
juice of half a lemon
1 inch piece of fresh ginger
1/2 cup cold water
2 huge handfuls of spinach
Place all of the ingredients in a Vitamix or other high powered blender and blend until smooth. Serve over ice!
