If you watched my Instagram stories, you'll know we headed to the States for New Years Eve this year. Whenever I'm in the States I always make a Target run and grab some food that we don't have in Canada. I have seen Larabar kids bars in Canada but not the Cinnamon Swirl flavor, so I grabbed a box. I opened them up on the way home for the girls, but ended eating all of them myself. They were SO good. I loved that they were made with Buckwheat flour, plus they were soft and so flavorful. I knew I had to try and recreate them myself. I'm happy to say that on the first attempt I made something VERY similar and I'm so happy with it! The girls loved it too and so did Jason.
If you've never had Buckwheat flour before, you should know it has a bit of a nutty/grainy texture. It's also gluten free, a good source of dietary fiber and has essential amino acids. I love any time I can incorporate it into baking. These bars are also on the healthier side because they use honey, apple sauce and cane sugar for sweetness instead of refined sugar. Larabar Cinnamon Swirl Copycat
Makes: 16 bars
Time: 40 min
Heat over to 350 degrees and line an 8x8 pan with parchment paper
Mix dry ingredients in a bowl. Combine wet ingredients in a separate bowl and mix until incorporated
Pour wet ingredients into dry ingredients and stir until combined
Pour batter into prepared pan and bake for 30-35 minutes. The middle still might be a bit gooey, but that's what makes them taste so good!
Take them out of the oven, let cool and cut into 16 squares
