Raw Vegan Gingerbread Bites

I was having post Christmas gingerbread cookie withdrawals, and came up with these bites as an alternative! I am in LOVE with gingerbread cookies, but my waistline doesn't appreciate all of the refined sugar, fat and carbs! I tried a healthier gingerbread cookie recipe I found last week and it was a total fail. They were dry and crumbly, not gooey and chewy like I expect my gingerbread to be. As I lay awake at night thinking of ways to redeem that cookie, I decided that the best way to keep a healthier version of a gingerbread cookie chewy was to not bake it. Therefore I came up with a recipe for these Raw Vegan Gingerbread Bites that are also gluten-free! They are quick & easy to make, have that gingerbread taste I love and are so much healthier than the cookie version! Recipe below.

Servings: 12 balls

Prep Time: 5 minutes

Ingredients:

  • 1 1/2 cups unblanched almond flour/meal (I use this brand)

  • 4 large medjool dates, pits removed

  • 1 tbs molasses (I use this brand, you can buy it here)

  • 2 tbs melted coconut oil

  • 2 tsp ground ginger (I use this brand)

  • pinch of nutmeg

  • dash of cloves

  • dash of sea salt

Instructions:

  1. Place all ingredients in a food processor or blender (I use my old school Ninja, I think this is their new version) until fully combined. If your mixture won't come together add one more date, another 1/2 tsp of melted coconut oil or a little bit of water. Once you get the right consistency use a spatula to scrape down the sides and place mixture into a bowl.

  2. Form into balls and store in refrigerator. If you want them to keep longer, store in the freezer.
