Spinach Protein Waffles

If you've been watching my Instagram stories lately, you'll see I have been all about the waffles. Specifically these Spinach Protein Waffles. I got a lot of questions about the recipe, so I thought I would just post it on here. They are nutrient dense, full of protein and give you the energy needed to take on the day. I usually double the recipe and keep the leftovers in a ziplock bag in the fridge or freezer. They are a perfect quick snack, just pop them in the toaster until crispy and top with your favorite toppings. How I did these waffles below.


Spinach Protein Waffles

Makes: 1 large waffle (4 squares)

Prep Time: 5 min

Cook Time: 5 min


  • 2 tbs flaxseed meal

  • 1/4 cup vanilla 100% whey protein powder

  • 2 tbs spelt flour (you can sub any flour here, like oat, whole wheat or even almond flour)

  • 1 egg

  • 3 tbs egg whites

  • 1 handful of spinach

  • 1/2 a ripe banana

  • 2 tsp coconut oil

  • 1/2 tsp maca powder

  • 1/4 tsp baking powder

  • drop of almond extract (you can use vanilla extract instead or omit)


  1. Preheat waffle iron. I use this waffle maker by Cuisinart and set it to 350 on the griddle setting.

  2. Add all of the ingredients to a blender and blend until combined and smooth.

  3. Once the waffle iron is hot, spray with coconut oil cooking spray and pour batter in the center. Close and cook until crispy, approximately 5 minutes. Most waffle irons will ding when they are done or a light will turn on.

4. Top with maple syrup, peanut butter, jam, bananas or any of your favorite toppings! I topped mine with peanut butter, homemade chia jam and hemp seeds.
