Creamy Apple Pie Oatmeal

This has been my FAVE go-to breakfast lately now that it's cooling off outside. I just want something warm, tasty and filling. This fits the bill! It comes together so easily, you just throw everything into one pot. It's gluten-free, refined sugar-free and dairy-free. High in protein and healthy fats to keep you full for a long time. Usually I make a big batch and Everly and I share it.

I also add Vital Proteins Collagen Beauty Greens, which gives it that funky green color. You don't need to add this in, it just adds in more protein and I find it has helped with my post-partum hair loss. It's also a great way to get in some greens into my breakfast. You can customize with any toppings you'd like, but my favorites are peanut butter, cinnamon and raisins!

 

Creamy Apple Pie Oatmeal

Serves: 1

Time: 7 minutes

Ingredients:

  • 3/4-1 cups unsweetened almond or cashew milk

  • 1 egg

  • 1/2 cup oragnic instant oats

  • 1 apple, shredded (skin on)

  • 1 tbs ground flaxseed

  • optional: collagen, cinnamon, peanut butter, raisins or any other toppings you want!

Instructions:

  1. Whisk milk and egg in a small pot over medium heat until combined.

  2. Add in oats, shredded apple, flaxseed and collagen.

  3. Whisk over medium heat for ~5 minutes or until oats are soft. You can add more milk if you want it thinner. Make sure to whisk continually so the egg doesn't scramble.
